If I may...

A battle takes place at each Province, whether any units are assigned there or not.  If you move a unit to another province where a battle has already resolved but the Province was not destroyed, they just kind of sit there until the end of the attack phase.  Obviously, you cannot move a unit to a province that has been destroyed because it is no longer there.  

A wise general will choose the order in which the battles take place to his best advantage - hoping to grant himself the highest mobility while denying the same to his opponent.  A wise defender will assign his units to provide the most flexible defense.  Once, I had a single Kitao defend *three* provinces, single-handedly, with Sup Tacs.  It was a sweet thing.
